Cantaloupe Peach Cobbler
1 ripe cantaloupe, seeded, peeled, cubed (about 3-4 cups)
2 ripe peaches or nectarines, seeded, peeled, and cubed
½ c sugar
¼ tsp ground ginger
½ tsp nutmeg
1 tsp cinnamon
1 tsp vanilla
½ stick Unsalted butter
1 pinch salt
TOPPING
3 Tbsp shortening
1 c all-purpose flour
1 Tbsp sugar
1 ½ tsp baking powder
½ tsp cinnamon
½ tsp salt
½ c milk
Preheat the oven to 400 degrees F.
Combine all filling ingredients in a large saucepan and stir. Simmer until the mixture starts to thicken and starts to boil then take off the heat. Transfer the mixture to a 9 x 11 baking dish.
In a separate bowl, mix flour, baking powder, sugar, cinnamon, and salt. Cut in shortening until the dough looks like small crumbs and then mix in milk.
Once a dough forms, scoop spoonfuls of the dough onto the hot fruit mixture.
Bake the cobbler for 25-28 minutes or until the dough turns golden brown.
